Baked Eggs with Cheese and Herbs
This really is the easiest breakfast. Just preheat your oven or toaster oven to 350 degrees. Crack two eggs in a greased oven safe dish. I use spray olive oil. Sprinkle the eggs with grated cheese, herbs/spices, sea salt and ground pepper. My favorite herbs and spices for eggs are: garlic, dill, parsley, red pepper and sometimes basil. Sometimes I add whatever chopped veggies I have on hand. Then I just pop it in the oven for 10 min. I like the yolks to be soft. If you want them firmer just bake a few minutes. Remove and let the eggs sit for a few minutes as they will continue to cook a little bit.
While the eggs are cooking I usually make some gluten free toast or fresh fruit. This time I had watermelon, cantaloupe, low fat cottage cheese and cinnamon. And coffee too!

The Planet Burger
This is a recreation of The Good Earth’s Planet Burger. It is so good! It’s full of rice, beans, seeds, veggies and herbs. I highly recommend this recipe!

I just changed a few things. I used gluten free soy sauce, brown rice flour instead of almond flour, omitted the dried thyme. It still turned out great. It’s a little messy making into patties, but I think that’s what made it fun to make.
I served the burgers with tomatoes, sprouts, avocado and Swiss cheese. I didn’t have buns when I made this, but I think it would be great on a toasted Udi’s gluten free hamburger bun. I’ll do that next time for sure.

Truffle Mac and Cheese
I used Trader Joe’s Gluten Free Mac and Cheese. It’s pretty good and very similar to Kraft. It definitely fulfills that mac and cheese craving. I usually use rice or soy milk and one time I used yogurt. They all taste good but I think rice milk has the most neutral taste.
I decided to add a little black truffle oil. I’ve seen truffle mac and cheese at some really good restaurants, of course they’re never gluten free. So I made my own. It was okay. Could have been better. I think the mac and cheese needs to be richer and creamier. So next time I might use whole milk Greek yogurt and butter. We’ll see how that goes. Anyway, it was good enough to scarf down. I would make it again. It’s just fun experimenting.

Baked Nachos
It’s quick and easy to make. I just layered a non stick baking pan with tortilla chips, grated cheese, toppings of choice, Mexican seasoning and then more cheese. Then I baked it in a preheated oven, 350 degrees for 10 -15 min. Then broil for 1-2 min. Watch it when broiling so the nachos don’t burn. Then use a large spatula to place some on a plate. Eat. Enjoy.
I use a variety of toppings depending on my mood and what I have on hand. Here’s some of my favorites: black beans or vegetarian refried beans, black olives, diced bell pepper, minced garlic, sliced jalapenos, sliced tomatoes, pico de gayo, chopped spinach, sliced mushrooms, the list goes on.
I made my own Mexican seasoning because I use it all the time: salt, pepper, garlic, cumin, cayenne, red pepper, jalapeno, cilantro, and parsley.
Baked nachos paired with a yummy Margarita is perfect for the summer!
