Strawberry Muffins - Gluten and Dairy Free

I used the Gluten Free Pantry Muffin Mix and followed the directions on the package. The only things I changed were using orange juice instead of milk and adding some cinnamon and lemon zest. Also, I used 2 full cups of chopped organic strawberries for a double batch. I made the muffins for a fundraiser and benefit concert for Collective Roots, a non-profit organization and garden. They educate the youth and community in growing and eating fresh, healthy food.

I’ve used the Gluten Free Pantry muffin mix before. I love it because I can add almost anything to it. Once I added dried cranberries and orange zest. They were great too.

I used The Gluten Free Pantry Muffin and Scone Mix. It’s a basic mix that you can add anything too. I added dried cranberries, orange zest, and used orange juice instead of milk. Also, I sprinkled sesame seeds on top, which became nice and toasty when baked on the muffins. They were so good. Even my friends were devouring them, might not have known they were gluten free. I would definitely recommend this mix. I want to see if I can make a more savory muffin, maybe use some rosemary and cheddar cheese. 
You can buy the mixes at glutino.com as well as Amazon. I was lucky enough to find it at my local grocery store. But I would definitely order in bulk online. Let me know if what muffin creations you come up with. I’d love to get other great ideas.
