This is my version of the artichoke sandwich I had at Chaco Canyon in Seattle. I used Udi’s gluten free bread, chopped artichoke and spinach, sliced tomatoes and mayo. I grilled it on the George Forman grill, which does wonders for gf bread. I served it with the rest of the tomato topped with dried basil and cucumber wedges with dill. Overall, it was a very delicious and healthy lunch. Can’t wait to make it again!

This artichoke sandwich at Chaco Canyon Organic Cafe was so good! When I got home I bought the ingredients to make my own. The sandwich has artichokes, sprouts, sliced cucumbers and veganaise on it. The lentil soup was excellent too. I need to find a restaurant like this here in the Bay Area.

Pasta with Artichokes and Tomatoes

This is a really easy pasta dish to whip up anytime. I just made it up using ingredients I had on hand. I used Trader Joe’s Brown Rice Pasta which is gluten free, 1 can of artichokes drained (not marinated), 1 can of diced tomatoes (unsalted), olive oil, Parmesan cheese, dill, garlic, salt and pepper to taste.

I cooked the pasta according to the directions on package. While that was going I heated up some olive oil in a large frying pan, added the artichokes, tomatoes with juice, cheese and seasonings. I let all the ingredients simmer stirring occasionally for about 10 minutes. Once the pasta was done and drained I scooped some onto a plate and topped it with the artichoke and tomato mixture. It was so delicious. The flavors went really well together. 

This also made great left overs. I just kept the pasta and topping in separate containers so the pasta didn’t get soggy. But it heated up nicely in the microwave at work.

Other things I could try:  pine nuts, kalamata olives, black olives, feta cheese, roasted bell peppers, roasted garlic, etc. I love recipes that can be experimented with. Enjoy!
