This is my version of the artichoke sandwich I had at Chaco Canyon in Seattle. I used Udi’s gluten free bread, chopped artichoke and spinach, sliced tomatoes and mayo. I grilled it on the George Forman grill, which does wonders for gf bread. I served it with the rest of the tomato topped with dried basil and cucumber wedges with dill. Overall, it was a very delicious and healthy lunch. Can’t wait to make it again!
