Time and Patience

I just want to send a word of encouragement to all who HAVE to eat gluten free. It takes time and patience. I know, I’ve been there. Reading labels in the grocery store. Explaining to waiters what you can or cannot eat. And the worst, explaining to your date that you just can’t eat gluteny foods. Don’t you hate it when people ask what are the symptoms. Ha Ha! Like I’m going to explain that!

Anyway, it’s not easy. I’ve been diagnosed with Celiacs for about 8 years now. I eat 100% gluten free, yet evil glutenousness still sneaks it’s way into my diet. However, I’m more healthy than I’ve ever been in my life and I love the foods I CAN eat. 

Today my dad is going to make gluten free potato pancakes. I’m really excited. I haven’t had potato pancakes in, well, over 8 years or so. It’s so sweet that he is reading labels in the store and will actually pick up gluten free food for me. I am very lucky for the support I have from family and friends.

Good luck and don’t give up. There are more and more gluten free options out there, recipes online, support groups, etc. Just don’t get discouraged. It will become easier. It just takes time and patience.
