Truffle Mac and Cheese
I used Trader Joe’s Gluten Free Mac and Cheese. It’s pretty good and very similar to Kraft. It definitely fulfills that mac and cheese craving. I usually use rice or soy milk and one time I used yogurt. They all taste good but I think rice milk has the most neutral taste.
I decided to add a little black truffle oil. I’ve seen truffle mac and cheese at some really good restaurants, of course they’re never gluten free. So I made my own. It was okay. Could have been better. I think the mac and cheese needs to be richer and creamier. So next time I might use whole milk Greek yogurt and butter. We’ll see how that goes. Anyway, it was good enough to scarf down. I would make it again. It’s just fun experimenting.
